Description
It is the synthesis of two apparently similar worlds, but with marked differences: the harvest year meets the repeatability of beer batches, the oenological tradition embraces the new Italian beer fantasy. The complementarity of these two elements has given life to our first Italian Grape Ale in collaboration with the Dogliotti 1870 winery in Castagnole delle Lanze (AT).
The freshly produced Samos wort is inoculated with a selected strain of Saccharomyces cerevisiae, typically dedicated to aromatic fermentations.
The extreme dryness is achieved by adopting the technique commonly used with BrutIPA beers, which involves the use of specific enzymes that continue to break down complex sugars into simple sugars easily assimilated by the yeast. Fermentation is then pushed to the extreme to eliminate any residual sugar and give us a light, dry beer with an aromatic profile that is clearly attributable to the IGA.
Straw yellow in color, the body is structured but not heavy, with a delicate acidity that makes it pleasantly fresh. The aromatic profile makes this beer elegant and unique thanks to the typical hints of yellow fruits and musky notes.
Ideal as an aperitif or combined with fish dishes.
